If you’re going to the trouble of making yourself a healthy chicken stir fry for dinner, make sure you use Australian Extra Virgin Olive Oil (AEVOO) for the ultimate health benefits.
Not only is AEVOO high in good (monounsaturated) fats, it is also full of antioxidants, so it can help to control your cholesterol and improve your heart health.
We love this simple spicy chicken stir fry adapted from Donna Hay’s Fresh and Light cookbook – and with so few ingredients, it’s not only great for your budget it’s a quick and easy mid-week meal for the whole family.
3 tbsp mild AEVOO
Chicken breast – finely sliced
Celery – chopped
White Onion – quartered
1/2 tsp dried chilli flakes
1 tsp cracked black pepper
1 tsp Sea Salt
Bunch of coriander
Heat AEVOO in a frying pan on medium, add chilli flakes, pepper and salt and fry off until fragrant, add chicken and fry until brown before adding onion and frying until tender.
Once chicken and onion are cooked throw in the celery and cook until slightly tender yet still crunchy. Take off the heat and dress with chopped coriander leaves and a squeeze of fresh lime. Serve on its own or with a portion of cooked brown rice.
